Roasts are extremely versatile and can be used to cook all kinds of amazing dishes. BBQ Beef is one of our family favorites and is super simple to make.
Bring 2-3lb roast to room temperature and cover with BBQ dry rub (DIY recipe below)
Sear roast in olive oil on all sides (about 5-7 min total)
Put in instapot with 2 cups beef broth, 1 peeled and quartered onion, and 4 samshed garlic cloves on high for 1hr 15 min.
Release pressure and open lid
Shred beef with a fork and remove all fat.
Add 1/2c. of BBQ sauce and stir.
Serve on Buns with coleslaw, and baked beans on the side.
2-3 lb Chuck Roast or Arm Roast
2 cups beef broth
4 cloves garlic
4 tablespoons BBQ Rub
Ingredients BBQ Rub:
1/2 c. brown sugar
1/4 c. paprika
1 tablespoon chili powder
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon salt
1 tablespoon ground black pepper
Yeild: 1 cup
