BBQ Beef Sandwiches

Roasts are extremely versatile and can be used to cook all kinds of amazing dishes. BBQ Beef is one of our family favorites and is super simple to make.


Instructions:

  1. Bring 2-3lb roast to room temperature and cover with BBQ dry rub (DIY recipe below)

  2. Sear roast in olive oil on all sides (about 5-7 min total)

  3. Put in instapot with 2 cups beef broth, 1 peeled and quartered onion, and 4 samshed garlic cloves on high for 1hr 15 min.

  4. Release pressure and open lid

  5. Shred beef with a fork and remove all fat.

  6. Add 1/2c. of BBQ sauce and stir.

  7. Serve on Buns with coleslaw, and baked beans on the side.


Ingredients:

2-3 lb Chuck Roast or Arm Roast

2 cups beef broth

4 cloves garlic

1 onion

4 tablespoons BBQ Rub

olive oil

BBQ Sauce


Ingredients BBQ Rub:

1/2 c. brown sugar

1/4 c. paprika

1 tablespoon chili powder

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon salt

1 tablespoon ground black pepper


Yeild: 1 cup
